This project is designed based on the advantageous resources of Weifang Vocational College’s catering service apprenticeship workshop, beverage and tea culture studio and the professional teachers of tourism management. This project offers online classes of daily Chinese, Chinese food culture and modern Chinese dining manners. You will learn the cultural knowledge, experience and practice the hands-on skills of Chinese dining culture. This project contains real-time teaching, online visits and online activities. The courses are divided into three parts: Part One: Language Class, including communicative Chinese and catering Chinese. Communicative Chinese covers basic Chinese in daily communication, and catering Chinese covers terms and expressions related to Chinese dining service, and ordering food. Part Two: Culture Class, including the development of Chinese catering industry, Chinese banquet culture, table and seating arrangement, names of Chinese dishes and Chinese alcohol. Part Three: Experience Class, including Chinese catering service and dining manners, Chinese banquet table setting and Chinese banquet service; and online visit of Weifang local well-known alcohol company and Weifang local food.

本项目立足潍坊职业学院餐饮服务学徒工坊、酒水与茶文化工作室等“硬实力”,以及旅游管理专业师资“软实力”,打造当代中餐礼仪云端课程,将日常汉语、中国饮食文化、中餐礼仪相融合,学员学习当代中餐服务礼仪、饮食文化等理论知识的同时,在线体验、锻炼学员的专业动手技能和中餐文化的感知能力。

本项目采取实时授课、云端参访、线上活动等形式开展。课程涵盖三个部分:

第一,语言课,分为交际汉语与餐饮汉语。交际汉语涵盖日常交际中的基础汉语,餐饮汉语包括中餐服务用语、点餐就餐用语等相关术语。第二,文化课,涵盖中国餐饮业的发展、中餐宴饮文化、中餐桌次及座次安排、中餐宴会菜品命名、中国酒文化基础知识等中国传统文化。第三,体验课,体验中餐服务与就餐礼仪、中餐宴会摆台、中餐席间服务等,云游潍坊当地知名酒水生产企业,领略潍坊当地特色美食。
