This course is an introduction to Sichuan and Chongqing pickles, combining theoretical knowledge with practical skills. It not only discusses the history of pickles in the Sichuan and Chongqing region but also explains the principles behind pickle making. Additionally, the course provides detailed instructions on the production methods of two different types of pickles: traditional Sichuan pickles and “diving” pickles. Despite its small size, Sichuan and Chongqing pickles are rich in nutrients and their unique flavors are unforgettable.

本课程是一门介绍川渝泡菜的课程,是一门理论课与制作课结合的课程。本课程既讲解了川渝泡菜的历史,也讲解了泡菜制作的原理同时还详细的介绍了传统川渝泡菜及跳水泡菜两种不同泡菜的制作方法。一份小小的川渝泡菜,却蕴含着丰富的营养,它独特的风味,让人难以忘怀。
