Tea is an important part of Chinese culture which has a long history in China and is also one of the oldest beverages in the world. There are more than 60 tea-producing countries and regions in the global, with a tea output of nearly 6 million tons, a trade volume of more than 2 million tons, and a tea-drinking population of more than 2 billion. The tea industry has become a pillar industry of agriculture and an important source of farmers' income in many countries, especially in developing countries. China has a long history in tea production, with a total area of 3.17 million hectares of tea gardens, and more than 3 million tons of tea produced in 2021. It is the only country in the world that produces six major teas including green, red, green, black, white and yellow teas, accounting for approximately 40% of the world's output. This course introduces the origin, dissemination, classification and crafts of Chinese tea, and students will know about the development of Chinese tea, and have a preliminary understanding of the six major types of tea in our country, and get clear of withering, de-greening, twisting, discoloration, drying , shaping and other basic tea processing technology.

茶是中华文化的重要组成部分。茶在中国具有悠久的历史,也是世界上最古老的饮料之一。全球产茶国和地区已达60多个,茶叶产量近600万吨,贸易量超过200万吨,饮茶人口超过20亿。茶产业已成为很多国家特别是发展中国家的农业支柱产业和农民收入的重要来源。中国制茶历史悠久,茶园面积317万公顷,2021年茶叶产量300多万吨,是世界上唯一生产绿、红、青、黑、白、黄6大茶类的国家,占世界产量约40%。本课程通过对中国茶叶的起源、传播、分类和制作工艺的介绍,可以让学生了解中国茶叶的发展,初步认识我国的六大类茶叶,并理解萎凋、杀青、揉捻、变色、干燥和做形等茶叶加工基本技术。
