The food culture of Kaifeng has a long history. Kaifeng is the birthplace of "Yu cuisine" among the top ten cuisines in China, which is characterized by the harmony of five flavors, moderate texture, wide selection of ingredients, attention to knife work, good at soup making, dozens of cooking techniques, grilled dishes are the most special, especially good at soaking. Kaifeng cuisine has become one of the excellent representatives of Yu cuisine with its unique Bianjing flavor.

开封的饮食文化源远流长,是中国十大菜系中“豫菜”的发祥地,其特点是五味调和、质味适中,选料广泛,讲究刀工,善于制汤,拥有几十种烹调技法,扒菜最具特色,尤其擅长泡发。开封菜以独特的汴京风味成为豫菜的优秀代表之一。
