Shanxi Mature Aged Vinegar is one of the four famous kinds of vinegars in China with a history of more than 3,000 years. As an important local cultural label and a Chinese cultural symbol, its aroma, dark reddish-brown color, mellowness and a strong sour taste have won itself the reputation of “the best vinegar in the world”. The brewing technique of Qing Xu vinegar is a national intangible cultural heritage. This course introduces the brewing process of Shanxi aged vinegar through a video that covers the steps from selecting raw materials and low-temperature alcoholization to high-temperature acetification, unique fumigation process and the aging process of “to sun in summer and fetch the ice in winter”, and experience the unique flavor and taste of “sour, sweet, umami, testy and tender” as well as its health functions. It also offers international students a chance to taste the aged vinegar to allow them to truly experience the culture of Shanxi.

山西老陈醋是中国四大名醋之一,拥有3000多年的历史,是重要的地方文化标签和中华文化名片,具有香、色、醇、浓、酸的特色,享有“天下第一醋”的美称。清徐老陈醋酿造技艺是国家级非物质文化遗产。本课程介绍通过实景拍摄,近距离了解山西老陈醋的酿造工艺,从原料精选,到低温酒化、高温醋化,独特熏制环节,以及“夏伏晒,冬捞冰”的陈酿过程,体验老陈醋“酸、甜、鲜、香、绵”的独特风味口感,以及老陈醋的多种保健功能,让留学生真实感受山西特色文化。
