“To the people, food is heaven.” This is a famous old saying in China, which means that food is people’s primal need. Although it has been put on different interpretations, this old saying should clearly justify the importance that “eating” holds in Chinese people’s lives. Cooking and eating has likely played a bigger role as a constitutive element of culture in China than in any other parts of the world. This course will introduce the different Chinese Cuisines, such as Shandong Cuisine, Cantonese Cuisine, Huaiyang Cuisine and Sichuan Cuisine among others, in their geographic and historic contexts, focusing on the main features, the representative dishes, related historical figures and/or stories of each of them. The introduction will cover both the various traditional Chinese food, which are associated with specific traditional Chinese festivals, such as mooncakes for the Mid-Autumn Festival; and some modern popular food among the young people, such as the bubble tea. You will also have the chance to take a look at some unique food and eating habits in China in this course.

“民以食为天”是中国人都知道的一句古语,意思是食物是老百姓的首要需求。虽然不同的人可能有不同的解读,但这句古语足以说明食品在中国人生活中的重要性,作为其不可分割的组成部分,烹饪和饮食在中国文化中做扮演的角色可能非世界其他国家和地区所能及。

本课程将主要介绍中国的主要菜系,如鲁菜、粤菜、淮扬菜、四川菜等,结合相关地理和历史背景,介绍各菜系的特点、代表性菜品和相关的人物故事。课程既涉及饮食传统和传统食品,也涉及一些当下流行的食品和饮食文化。
