The culture of Chinese food is extensive and profound, for thousands of years, Chinese have developed their unique dietary habit and custom. The topic of this course is Chinese food, aiming to help the students to get a further understanding of Chinese food through the introduction of relevant aspects. This course selects several representative aspects to give a introduction:First,features of Chinese food - Chinese food pays a lot of attention to color, aroma and taste, emphasizing the collocation of color, the proper using of seasonings, the harmony of five flavors and the unforgettable textures; Second, Chinese traditional eight cuisines - because of the diversity of climate, geography, history, products and customs, after a long historical evolution,Chinese food can be divided into eight regional cuisines, with different cooking methods and specialties. Third, typical Chinese food with special significance - take noodles, dumplings, red boiled eggs, fish and so on as examples to show the unique significance of typical Chinese food.Fourth, Chinese food culture - when you are enjoying the delicious food, you should also pay enough attention to the table manners, take seating, ordering and serving, dining, respecting and drinking for example to explain the importance of table manners.Fifth, chopsticks, the use of chopsticks has a long history, which reflecting the wisdom of Chinese ancient people, and we should have an at least basic idea of some taboos. All in all, food not only meet people’s needs to survive, but also become a kind of enjoyment. As the saying goes, food is the first necessity of the people, through which we can see the importance of food, and which is also what the Chinese have always believed in. Through the study of this course, on the one hand, we hope that the students can get a good knowledge of Chinese food’s features and cultures, enriching their store of knowledge,on the other hand, we hope to strengthen their impression of China and enhance their sense of identity with Chinese culture, thus improving their motivation of learning Chinese and Chinese culture.

中国的饮食文化博大精深,几千年来,中国人形成了自己独特的饮食习惯和风俗。本课程以中国的饮食文化为主题,旨在通过相关方面的介绍让学生对中国的饮食文化有进一步的了解。本课程选取了比较有代表性的几个方面展开介绍:一、中国的饮食特色——讲究色香味俱全,注重色彩的搭配、精准的佐料使用、五味的调和及令人难以忘怀的口感;二、中国的传统八大菜系——由于气候、地形、历史、物产及饮食风俗的不同,经过漫长的历史演变,中国形成了八大菜系,不同的菜系有不同的烹饪方式和风味特色;三、中国的特色食物及其意义——以面条、饺子、红鸡蛋、鱼等为例,展现中国传统食物的独特意义;四、中国的餐桌礼仪——享受美食的同时,也要注意餐桌礼仪,以座次、点菜上菜、就餐、尊重他人以及饮酒等方面的注意事项为例,阐释餐桌礼仪的重要性;五、中国的筷子——筷子的使用在中国有着悠久的历史,反映出中国人的智慧,在使用时也要牢记一些基本的禁忌。总之,食物不仅满足了人们的生存需要,也成为一种享受。俗话说,民以食为天,可见食物在日常生活中的重要性,这也是长久以来中国人所奉行的理念。通过本课程的学习,一方面,希望学生能够对中国的饮食特色及文化有所了解,丰富学生的知识储备,另一方面,希望能够加深学生对中国的印象,增强对中国文化的认同感,从而提高学生学习汉语的积极性。
