1This course mainly introduces the dietary culture of Quanzhou, the start of Maritime Silk Road. Based on Quanzhou dietary culture, traditional local specialties like noodles paste, oyster omelets, pork Zongzi, Phasolosma Esculenta jelly, vinegar meat and the background stories are elaborated. In addition, students are taught to cook pancake rolls, a Hokkien homesick dish. While learning about the local dietary culture, students are equipped with a deeper understanding of time-honored Quanzhou food.
本次课主要介绍海上丝绸之路的起点——泉州的饮食文化,以泉州的饮食文化起源切入,围绕面线糊、蚵仔煎、烧肉粽、土笋冻、醋肉等泉州传统特色小吃及其背后的故事展开教学,并教学生制作闽南人的思乡菜——“润饼菜”,使学生在了解泉州饮食文化的过程中感受泉州深厚的饮食文化底蕴。
