This course mainly introduces the dietary culture of Quanzhou, the start of Maritime Silk Road. Based on Quanzhou dietary culture, traditional local specialties like noodles paste, oyster omelets, pork Zongzi, Phasolosma Esculenta jelly, vinegar meat and the background stories are elaborated. In addition, students are taught to cook pancake rolls, a Hokkien homesick dish. While learning about the local dietary culture, students are equipped with a deeper understanding of time-honored Quanzhou food.
